I just found this one with lots of articles on bike components and maintenance: http://thebikelab.com/ It also has an RSS feed so you don't need to keep checking the site for new stuff.

Any other good ones out there?

I know I might get some flak for this, but check out www.utahmountainbiking.com

No, this isn't UT, but this site has a lot of good info aside from just the trail descriptions. Scroll down for some nice sections on first aid, maintenance, and technique.  Written by guys who do some rugged riding Fo Sho!
